Gnocchi 

I discovered this recipe for gnocchi and decided to give it a whirl!…It requires a fair amount of elbow grease, as each egg yolk has to be incorporated into the melted cheese before adding the rest.  It is delicious and light and a good substitute for regular gnocchi.  In fact, I think I might try rolling out the ‘dough’ to make lasagne next time.  See the link below.
