Microwave, white bread – single serving

MICROWAVE SINGLE SLICE WHITE BREAD:


INGREDIENTS:

3 large egg whites

3 tablespoons almond flour

1+1/2 tablespoons golden flax flour / I buy golden flax seeds and mill them as I need it

A pinch of salt

1/2 teaspoon baking powder

1+1/2 tablespoons coconut or olive oil

METHOD:

Combine all the dry ingredients in a small bowl and set aside.

Beat the egg whites on high until light and frothy, but not too firm. This takes about 20 seconds.

Add the oil and dry ingredients to the egg whites and beat on low to combine, without deflating the egg whites too much.

Grease a square microwave safe Tupperware (sandwich sized) container.  Pour the batter into the container and microwave on full power (900w).  Cook for 2 min 20 seconds.

*Please note the cooking time has been tested on a 900w microwave *

Once cooled, slice in half horizontally. Yields two slices.


This bread slice is ideal for toasted sandwiches with fillings of your choice. It also makes a very good ‘braai toastie’. (Toasted cheese, onion and tomato toasted on the BBQ)

*Use the egg yolks for custard, ice cream, hollandaise sauce or Bearnaise sauce*
